Ariyunda | Roasted rice ladoo | Ari unda | അരിയുണ്ട | Rice balls | Gluten-free | No sugar No oil

In this video, I will share with you how to make a traditional Kerala sweet called ariyunda or ari unda. It is made of roasted rice, is very quick and easy to make, and is super delicious!


This recipe is an instant hit among children. And it's healthy too, because it uses no oil, butter or sugar.


Preparation time: 5 mins

Cooking time: 5-10 mins

Servings: 6-7


Ingredients:

1 cup Kerala boiled matta rice

3 tbsp Jaggery powder

1/4 tsp Cardamom powder

1 tbsp grated coconut

1 tsp Black sesame seeds

Raisins and cashews


Directions:

  1. Dry roast the Kerala boiled matta rice on low flame until it becomes light brown and crispy (no oil needed).

  2. Grind it to a coarse powder using a blender.

  3. In another pan, take 1/4 cup water. Add 3 tbsp jaggery powder

  4. Allow the jaggery to melt. Keep stirring until you get a string-like consistency. This means that when you place a drop on your index finger and press down with your thumb, it will form a single string when you lift your thumb.

  5. Add 1/4 tsp cardamom powder.

  6. Add 1 tbsp grated coconut.

  7. Now add the powdered rice.

  8. Mix well.

  9. Add 1 tsp black sesame seeds.

  10. Add raisins and cashews.

  11. Mix well and transfer to a bowl.

  12. Make the ladoos while the mixture is still warm.

  13. The ariyunda will harden as it cools.

  14. Store in an air-tight container.
